  • 1 bunch fresh asparagus trimmed
  • 2 tablespoons olive oil
  • 1 lemon zested and juiced

  • 2 tablespoons fresh parsley chopped (optional, for garnish or flavor booster)

  • Pat the shrimp dry, trim woody ends off asparagus (cut into 1-2 inch pieces if desired), and zest and juice the lemon.
  • Heat 2 tablespoons of olive oil in a large skillet or pan over medium-high heat until shimmering.
  • Add asparagus to the hot pan; sauté for 3-5 minutes, stirring occasionally, until bright green and slightly tender-crisp.
  • Push asparagus to one side, add shrimp to the other side in a single layer, and cook for 1-2 minutes per side until pink and opaque.
  • Pour in fresh lemon juice and sprinkle with lemon zest; toss everything together to coat evenly.
  • Season with salt and pepper to taste, stir in fresh chopped parsley if using, and serve immediately.

Notes

For extra flavor, marinate the shrimp in a little lemon juice and olive oil for 15 minutes before cooking.
