  • 0.5 tsp dried oregano
  • 0.25 tsp garlic powder
  • 2 cloves garlic minced
  • 1 cup chicken broth
  • 0.25 cup fresh lemon juice
  • 1 tbsp fresh parsley chopped
  • 1 tbsp fresh chives chopped
  • 1 tbsp unsalted butter
  • 1 lb asparagus trimmed and cut into 1-inch pieces

Preparation

  • Pat the chicken breasts dry and season generously with salt, pepper, oregano, and garlic powder.
  • Heat olive oil in a large skillet over medium-high heat until shimmering.
  • Sear chicken for 4-5 minutes per side until golden brown and cooked through; remove and tent with foil.
  • Reduce heat to medium, then add minced garlic to the skillet and sauté for 30 seconds until fragrant.
  • Pour in chicken broth and lemon juice, scraping up any browned bits from the pan and bring to a simmer.
  • Add asparagus pieces and cook for 3-5 minutes until tender-crisp.
  • Stir in butter, fresh parsley, and chives until the sauce is slightly thickened, then adjust seasonings.
  • Return the chicken to the skillet, nestling it into the sauce and asparagus, and spoon sauce over chicken.
  • Serve immediately, optionally with extra lemon wedges.

Notes

Pounding the chicken to an even thickness ensures it cooks evenly. Do not overcrowd the pan when searing the chicken to get a good crust. Feel free to adjust the amount of lemon juice and fresh herbs to your taste.
