Ingredients
  

Main Ingredients

  • 2 lbs chicken breasts or thighs boneless, skinless
  • 1 packet taco seasoning
  • 1/2 cup chicken broth
  • 2 limes Juice of
  • 1/2 cup fresh cilantro chopped (stir in after cooking)

For Serving

  • Corn tortillas or flour tortillas
  • taco toppings shredded lettuce, diced tomatoes, cojita cheese, sour cream, guacamole, hot sauce

Cooking Instructions

  • Place the chicken breasts or thighs at the bottom of your slow cooker.
  • Pour chicken broth, taco seasoning, and lime juice over the chicken.
  • Cover and cook on low for 3-4 hours or on high for 2-3 hours, until the chicken is tender and can be easily shredded.
  • Remove the chicken to a cutting board, or shred it directly in the slow cooker using two forks while it is still in the cooking liquid.
  • Stir in the fresh cilantro just before serving.
  • Spoon the shredded chicken into warmed tortillas and add your favorite toppings.

Notes

For extra flavor, marinate the chicken in a little extra lime juice and chili powder for 30 minutes before cooking. Adjust the amount of taco seasoning to your preference, and feel free to add a pinch of smoked paprika for a deeper flavor profile.
