  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 2 tbsp olive oil, divided
  • 1 tsp dried oregano
  • 0.5 tsp garlic powder
  • Salt and black pepper to taste
  • 1 large bell pepper (red or yellow), deseeded and chopped into 1-inch pieces
  • 1 small red onion, chopped
  • 1 cup broccoli florets, fresh or frozen
  • 1 medium zucchini, halved lengthwise and sliced
  • 0.5 cup chopped sun-dried tomatoes (oil-packed, drained)
  • 0.25 cup Kalamata olives, halved
  • 2-3 cloves garlic, minced
  • 0.25 tsp red pepper flakes (optional)

Garnish (optional)

  • 0.25 cup crumbled feta cheese
  • Fresh parsley or basil, chopped

Instructions
 

Preparation

  • Cut the chicken and all vegetables as specified; mince the garlic and drain the sun-dried tomatoes.
  • In a bowl, toss chicken with 1 tbsp olive oil, oregano, garlic powder, salt, and pepper until coated.

Cooking

  • Heat the remaining 1 tbsp olive oil in a large oven-safe skillet over medium-high heat. Sear chicken for 4-5 minutes, turning until browned; remove and set aside.
  • Add onion and bell peppers to the skillet and cook for 5-7 minutes until they soften.
  • Stir in broccoli and zucchini, cooking for 3-5 minutes until tender-crisp; add minced garlic and red pepper flakes in the last minute.
  • Return chicken to the skillet, add sun-dried tomatoes and olives, and toss everything together. Cook for 2-3 minutes until chicken is thoroughly cooked and vegetables are tender-crisp.

Finishing Touches

  • Taste and adjust seasonings as needed.
  • Garnish with feta cheese and fresh parsley or basil, then serve hot directly from the skillet.

Notes

For extra flavor, marinate the chicken for at least 30 minutes before cooking. This dish is also great with a squeeze of fresh lemon juice before serving to enhance the zesty Mediterranean flavors.
