  • 1 15-ounce can Canned chickpeas, rinsed and drained
  • 1/2 cup Cherry tomatoes, halved
  • 1/2 cup Cucumber, diced
  • 1/4 cup Red onion, thinly sliced
  • 1/4 cup Feta cheese, crumbled
  • 2 tablespoons Fresh parsley, chopped

Dressing Ingredients

  • 2 tablespoons Olive oil
  • 1 tablespoon Lemon juice
  • 1/2 teaspoon Dried oregano
  • 1/4 teaspoon Salt or to taste
  • 1/8 teaspoon Black pepper or to taste

Preparation

  • In a medium bowl, combine the cooked quinoa, rinsed chickpeas, halved cherry tomatoes, diced cucumber, and thinly sliced red onion.
  • In a separate small bowl, whisk together olive oil, lemon juice, dried oregano, salt, and black pepper to create the dressing.

Assembly

  • Pour the prepared dressing over the quinoa and vegetable mixture, then toss gently to coat all ingredients evenly.
  • Stir in the crumbled feta cheese and chopped fresh parsley.
  • Taste the bowl and adjust seasonings as needed; serve immediately or store in an airtight container in the refrigerator.

Notes

This bowl is highly customizable; feel free to add other Mediterranean-inspired ingredients like Kalamata olives, bell peppers, or sun-dried tomatoes. For a heartier meal, you can add grilled chicken or fish. It's also great for meal prep, as it holds up well in the refrigerator for a few days.
