Main Ingredients

  • 2 (4-6 oz each) Cod fillets fresh or thawed
  • 1 cup Cherry tomatoes halved
  • ½ cup Kalamata olives pitted and halved
  • ¼ Red onion thinly sliced
  • 2 tablespoons Olive oil
  • 1 teaspoon Dried oregano
  • 1 Lemon half sliced, half for juice
  • 2 tablespoons Fresh parsley chopped (for garnish)
  • Salt and black pepper To taste

Instructions
 

Prep

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Combine halved cherry tomatoes, halved Kalamata olives, and thinly sliced red onion in a bowl. Drizzle with 1 tablespoon of olive oil, dried oregano, salt, and pepper, then toss gently.

Season Cod

  • Pat cod fillets dry with a paper towel. Drizzle the remaining 1 tablespoon of olive oil over the fish and season with salt and pepper.

Assemble & Bake

  • Place seasoned cod fillets on the baking sheet, scattering the tomato and olive mixture around and over the cod. Top with lemon slices.
  • Bake for 12-15 minutes, until the cod is opaque and flakes easily and the tomatoes are softened.

Finish & Serve

  • Squeeze fresh lemon juice over the cooked cod and vegetables. Garnish with fresh chopped parsley before serving.

Notes

For extra flavor, you can marinate the cod in a little lemon juice and olive oil for 15 minutes before baking. Adjust cooking time based on the thickness of your cod fillets. Serve with a side of quinoa or a light salad for a complete meal.
