  • 1 block feta cheese about 7-8 oz, preferably packed in brine
  • 1 large English or Persian cucumber
  • 10-12 small cocktail or bamboo skewers
  • 1/4 cup cherry or grape tomatoes halved
  • 12-15 pitted Kalamata olives

Optional Garnishes & Flavor

  • 1 tbsp fresh mint leaves finely chopped
  • 1 tsp dried oregano
  • 1 tbsp extra virgin olive oil
  • 1/4 lemon lemon zest

Instructions
 

Preparation

  • Drain the feta cheese and pat it dry with a paper towel. Cut the feta block into 1/2-inch to 3/4-inch cubes.
  • Wash the cucumber and cut it into 1/2-inch thick rounds, then quarter or halve each round into bite-sized pieces.
  • Halve the cherry or grape tomatoes and ensure the Kalamata olives are pitted.

Assembly and Serving

  • Thread one piece of cucumber, followed by feta, then a tomato half, and finally a Kalamata olive onto a skewer. Repeat this pattern until the skewer is almost full.
  • Continue assembling skewers until all prepared ingredients are used.
  • Arrange on a platter; optionally sprinkle with dried oregano, chopped mint, a drizzle of olive oil, and lemon zest. Serve immediately, chilled.

Notes

These skewers are a fantastic light appetizer or snack, perfect for parties or a quick, healthy bite. For best flavor, use high-quality feta cheese. The optional garnishes significantly enhance the overall taste, especially the fresh mint and lemon zest.
