Ingredients
  

Ground Turkey Mixture

  • 1 lb (93% lean) ground turkey
  • 1 tbsp olive oil
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • red pepper flakes optional
  • Salt and freshly ground black pepper to taste
  • 1 tbsp lemon juice optional, for turkey

Bowl Assembly

  • 1 cup cooked quinoa
  • 1/2 cup chopped cucumber
  • 1/2 cup chopped cherry tomatoes
  • 1/4 cup Kalamata olives halved
  • 1/4 cup crumbled feta cheese
  • 2 tbsp fresh dill chopped (for garnish)
  • 1/4 cup tzatziki sauce for serving

Instructions
 

Preparation

  • Cook quinoa according to package directions, then chop cucumber, cherry tomatoes, and Kalamata olives.

Brown the Turkey

  • Heat olive oil in a large skillet over medium-high heat. Add ground turkey, breaking it up, and cook until browned for 5-7 minutes.

Sauté Aromatics & Seasoning

  • Reduce heat to medium, add chopped onion and cook for 3-4 minutes until softened. Stir in minced garlic, oregano, basil, red pepper flakes (if using), and season with salt and pepper, then add lemon juice if desired.

Assemble Your Bowl

  • Ladle cooked quinoa into a bowl and top generously with the seasoned ground turkey mixture.

Add Your Finishers

  • Arrange chopped cucumber, cherry tomatoes, and Kalamata olives over the turkey. Sprinkle with crumbled feta cheese and fresh dill, then serve with tzatziki sauce and enjoy.

Notes

For an extra burst of flavor, marinate the cooked ground turkey in a little extra lemon juice and a pinch of sumac before assembling. You can also customize your bowl with other Mediterranean-inspired toppings like hummus or roasted red peppers.
