Zesty Mediterranean Ground Turkey Bowls

Ingredients
  

Ground Turkey Mixture

  • 1 tbsp olive oil
  • 1 lb 93% lean ground turkey
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
  • 1 tsp dried oregano
  • 1/2 tsp ground cumin
  • 1/4 tsp red pepper flakes optional
  • 1 red bell pepper finely diced
  • 1 can diced tomatoes undrained
  • 1/2 cup chicken broth
  • 1/4 cup fresh parsley chopped, plus more for garnish
  • 1/4 cup fresh mint chopped, plus more for garnish
  • Salt and freshly ground black pepper to taste

For Serving

  • 2 cups cooked brown rice or quinoa
  • 1/2 cup crumbled feta cheese for garnish
  • 1/4 cup sliced Kalamata olives for garnish
  • Lemon wedges for serving

Instructions
 

Cooking Turkey Mixture

  • Heat olive oil in a large skillet or Dutch oven over medium-high heat.
  • Add ground turkey, break it up, and cook until no longer pink, then drain excess fat.
  • Add chopped onion and red bell pepper to the skillet and cook until softened.
  • Stir in minced garlic, dried oregano, ground cumin, and red pepper flakes; cook for 1 minute until fragrant.
  • Pour in diced tomatoes and chicken broth, bring to a simmer, then cover and cook on low heat for 10-15 minutes to meld flavors.
  • Remove from heat, stir in fresh parsley and mint, and season with salt and pepper.

Serving

  • Divide cooked brown rice or quinoa among bowls and top with the Mediterranean ground turkey mixture.
  • Garnish each bowl with feta cheese, Kalamata olives, fresh parsley, and mint; serve with lemon wedges.

Notes

For an extra kick, add a pinch more red pepper flakes. You can also prepare the turkey mixture ahead of time and reheat for quick lunches or dinners.
