  • 1 tbsp olive oil
  • 1 lb lean ground turkey (93/7)
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 1 red bell pepper chopped
  • 1 cup zucchini diced
  • 1 diced tomatoes (14.5 oz) can, undrained
  • 1/2 cup chicken or vegetable broth
  • 1 tsp dried oregano
  • 1/2 tsp ground cumin
  • 1/4 tsp red pepper flakes (optional, for a little heat)
  • Salt and freshly ground black pepper to taste
  • 1/2 cup pitted Kalamata olives halved

For Garnish

  • 1/4 cup fresh parsley chopped
  • 2 tbsp crumbled feta cheese
  • Lemon wedges for serving

Cooking Steps

  • Heat olive oil in a large skillet over medium-high heat, then add ground turkey and cook until browned, breaking it up with a spoon.
  • Drain any excess fat from the skillet if needed.
  • Add onion, garlic, red bell pepper, and zucchini to the skillet and sauté until the vegetables are softened and fragrant.
  • Stir in oregano, cumin, red pepper flakes (if using), salt, and pepper, cooking for about 1 minute until fragrant.
  • Pour in diced tomatoes and broth, then bring the mixture to a simmer.
  • Reduce heat to low, cover, and simmer for 10-15 minutes to meld flavors and tenderize vegetables.
  • Stir in the Kalamata olives and cook for another 2-3 minutes to heat them through.
  • Taste and adjust seasonings as desired.
  • Serve hot, garnished with fresh parsley and feta, with a lemon wedge for extra zest.

Notes

This skillet can be served as a standalone meal or with a side of quinoa, brown rice, or a light salad. For a spicier kick, increase the amount of red pepper flakes. Leftovers store well in an airtight container in the refrigerator for up to 3 days.
