  • 1 lb ground turkey 93/7 recommended
  • 1 zucchini chopped into 1/2-inch pieces
  • 1 pint cherry tomatoes halved
  • red onion cut into wedges
  • red bell pepper deseeded and chopped into 1-inch pieces
  • 1/4 cup Kalamata olives pitted and halved

Seasoning & Oil

  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt or to taste

Optional Toppings & Garnish

  • 1/4 cup crumbled feta cheese optional, for topping
  • Fresh parsley chopped (for garnish)
  • Lemon wedges for serving

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
  • In a large bowl, combine chopped zucchini, cherry tomatoes, red onion, and red bell pepper; drizzle with olive oil and season with oregano, garlic powder, black pepper, and salt. Toss until well coated.

Cooking

  • Spread the seasoned vegetables in a single layer on one side of the baking sheet and crumble the ground turkey evenly on the other side.
  • Roast for 20 minutes in the preheated oven.
  • Remove the baking sheet, stir the turkey to break up pieces, and gently toss the vegetables; add Kalamata olives to the pan.
  • Return to the oven and cook for another 10-15 minutes, or until the turkey is fully cooked and vegetables are tender-crisp.
  • If desired, sprinkle crumbled feta cheese over the dish during the last 5 minutes of baking.

Serving

  • Garnish with fresh chopped parsley and serve immediately with lemon wedges for a zesty finish.

Notes

For an extra touch of flavor, you can add a pinch of red pepper flakes to the vegetables before roasting. Adjust cooking times based on your oven and desired tenderness of vegetables.
