  • 1 block (14-16 oz) firm or extra-firm tofu, pressed and crumbled
  • ¼ cup red onion, chopped
  • 1 clove garlic, minced
  • ½ cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon nutritional yeast (for cheesy flavor, optional)
  • ½ teaspoon turmeric powder (for color and anti-inflammatory properties)
  • ¼ teaspoon black pepper
  • Salt to taste
  • Lemon wedges for serving

  • Heat olive oil in a non-stick skillet over medium heat.
  • Add crumbled tofu, red onion, and minced garlic to the pan and sauté for 5-7 minutes until the tofu is lightly browned and the onion is softened.
  • Stir in nutritional yeast, turmeric powder, and black pepper, then cook for another 2 minutes to meld the flavors.
  • Add halved cherry tomatoes and fresh spinach, cooking for 2-3 minutes until the spinach is wilted and the tomatoes are slightly softened.
  • Remove from heat, stir in fresh parsley and dill, and season with salt to taste.
  • Serve immediately with a squeeze of fresh lemon juice.

Notes

For extra flavor, consider adding a pinch of dried oregano or a splash of white wine vinegar during cooking.
