  • 1/4 cup cream cheese, softened
  • 2 tablespoons mayonnaise
  • 1 tablespoon lime juice
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon ground cumin
  • 1/4 cup corn, drained
  • 1/4 cup black beans, rinsed and drained
  • 2 tablespoons chopped fresh cilantro
  • Salt and black pepper to taste
  • 1/2 cup shredded Monterey Jack cheese

For Serving & Garnish

  • Mini bell peppers (red, yellow, orange), halved and de-seeded or corn tortilla chips for serving

Instructions
 

Preparation

  • In a medium bowl, combine shredded chicken, softened cream cheese, mayonnaise, lime juice, chili powder, and cumin, mixing until thoroughly combined and creamy.
  • Gently fold in the corn, black beans, and chopped cilantro.
  • Season the mixture with salt and black pepper to taste.
  • Stir in the shredded Monterey Jack cheese.

Serving

  • If using bell peppers, spoon the chicken mixture into each halved pepper and arrange on a platter. If using tortilla chips, serve the mixture in a small bowl for dipping.
  • Garnish with a sprinkle of fresh cilantro or a dollop of sour cream/Greek yogurt if desired, and serve immediately.

Notes

These chicken bites are versatile, enjoy them warm or cold. For a spicier kick, add a pinch of cayenne pepper to the mixture. If you don't have bell peppers, cucumber slices or lettuce cups make great alternatives for serving.
