  • 2-3 medium zucchini
  • 1 cup fresh basil leaves
  • 1/2 cup pine nuts (or walnuts for an alternative)
  • 2 cloves garlic, minced
  • 1/4 cup nutritional yeast
  • 1/2 lemon juice
  • 1/4 cup olive oil
  • Salt and black pepper to taste
  • Cherry tomatoes, halved (for garnish)

  • Using a spiralizer, create noodles from the zucchini and set them aside.
  • In a food processor, combine basil, pine nuts, minced garlic, nutritional yeast, lemon juice, olive oil, salt, and pepper; process until smooth, adding water if needed for desired consistency.
  • Gently toss the zucchini noodles with the pesto, then garnish with cherry tomatoes and serve immediately.

Notes

For a creamier pesto, add 1/4 of an avocado to the food processor with the other ingredients.
