Using a spiralizer, create noodles from the zucchini and set them aside.
In a food processor, combine basil, pine nuts, minced garlic, nutritional yeast, lemon juice, olive oil, salt, and pepper; process until smooth, adding water if needed for desired consistency.
Gently toss the zucchini noodles with the pesto, then garnish with cherry tomatoes and serve immediately.
Notes
For a creamier pesto, add 1/4 of an avocado to the food processor with the other ingredients.
